Paul Wedgwood

Co-owner and Head Chef

Paul Wedgwood started his career in the Lake District working in a variety of establishments from pubs and leisure parks to fine dining Michelin starred restaurants.

Paul was particularly inspired by working under celebrity chef John Tovey at Miller Howe in Windermere.

A passionate and ambitious chef, Paul’s long term goal was always open a fine dining restaurant in which he would combine his experiences to be able to offer fine dining in informal surroundings with excellent service.


1999, The Georgian House Bar

In 1999 Paul opened the Georgian House bar in Kendal which was hugely successful despite being located in a working class market town. Six years later on a visit with Lisa to his parents in Edinburgh the couple’s dreams started to become realised when they found the venue for Wedgwood the Restaurant.


A key player in the Edinburgh restaurant scene

Wedgwood the Restaurant has quickly become a key player in the Edinburgh restaurant scene and Paul, with his vivacious and enthusiastic character, is often called upon and is available to perform cooking demonstrations throughout the UK and internationally.

Paul is also a regular favourite at the Taste of Edinburgh Festival.

Lisa Wedgwood

Co-owner and Restaurant Manager

Lisa was born and raised in the Lake District, after a year at college Lisa’s career embarked on a completely different path to hospitality when she began working as an events coordinator at photographic training studio.

During her 7 years there, Lisa learnt every aspect of how to run a business from accounting and sales to customer service and time management. To fill her time during the evening (whilst Paul was working), Lisa kept her love for hospitality alive by working in a local bar and restaurant.

When she and Paul decided to make the move to Edinburgh in 2005, Lisa was naturally able to combine all her qualities in order to give her guests the perfect night out.


How did Wedgwood start for you?

My husband Paul and I discussed launching our own restaurant and I really wanted us to work together so, naturally, it was an easy decision to make.

I run the front and back of house, organise the accounts, etc. I basically do everything except the cooking. Paul takes care of the kitchen.


What attracted you to Edinburgh?

We originally wanted to launch our first restaurant in the English Lake District where we lived at the time but we couldn’t find the right property.

We eventually started looking further afield and Edinburgh was the next best place we knew, as that’s where Paul’s parents lived. 

It was a big scary step to take but we took that leap of faith.
